Apparantly there’s a caret-color CSS property in GTK that could be used for this, but as far as I can tell there’s no way to set the caret’s width.
I tried using it but again it didn’t work. I’m starting to think that to apply some of these styles it’ll be necessary to alter how the styles are being added to GTK.

Didn’t manage to change the cursor width, but I did manage to change the cursor color.
